This stall is different than typical ayam penyet and chicken/fish sambal places. The main offering is essentially the taliwang sambal, which is different than Malay sambals available in SG in a sense it's more umami-dominant due to lots of shrimp paste added to the mix. And oh it's also spicier because the higher ratio of bird's eye chili used. The chicken and fish (pomfret) served along side the sambal and rice (there are two choices of rice) are not much different than other chicken-fish sambal places. The price is also fair and standard compared to similar stuffs elsewhere.

Ayam Penyet YB: A Sambal Revelation Move over, standard ayam penyet—there’s a bold new contender in town. Ayam Penyet YB isn’t your typical chicken-and-sambal stall; it’s a destination for those seeking a deeper, more complex chilli experience. The star here isn’t just the protein—it’s the spectacular Taliwang-style sambal. This sambal is a game-changer. Distinct from the more common Malay sambals in Singapore, it builds its profound, savory depth on a foundation of intense shrimp paste (belacan), delivering a powerful umami punch. It’s also notably fierier, thanks to a generous use of bird's eye chillies, making each bite a thrilling, flavour-packed adventure. The accompanying grilled chicken and pomfret are solidly executed—crispy, tender, and satisfying—much like other reputable establishments. They serve as the perfect, neutral canvas for the magnificent sambal. You also have a choice between white and yellow rice to complete your plate. All of this comes at a very reasonable and competitive price point, offering exceptional value for such a distinctive meal. Overall Experience: I visited for dinner, dining in at the coffeeshop. The service was efficient and welcoming, and the lively, no-frills atmosphere added to the authentic experience. Final Verdict: A standout spot for sambal enthusiasts. While the proteins are familiar, the sambal alone is worth the trip. Ayam Penyet YB delivers a memorable, spice-forward meal that breaks the mould. 💰 Price per person: Typically under $10

Ordered the Boneless Chicken Sambal Taliwang ($6.50) for jasmine rice. Additional $0.50 if coconut rice. The Sambal is the main star, holding the dish together. Portion and offerings are normal in any penyet store. Soup was nice, tauhu and tempeh were also great. The sambal had a slight kick, had a nutty essence to it. Only drawback was that the boneless chicken had more of a flaky breast meat texture, which did not really hit that hard with the sambal. Its decent, I wouldn't say its anything out of the ordinary.
